Recipe Introduction
I don't know if Mom ever made this. But I remember her buying Kim Chee. I never ate the stuff! But Nora and Matt loved it!! The rest of us in the family would just about die (from the smell) when they would open the jar!!!
List of Ingredients
1 large head Chinese cabbage (3 1/2 pounds)
5 T. pickling salt
Cut cabbage into 1 inch pieces. sprinkle with salt. Let stand 4 to 5 hours. Mix occasionally. Rinse well with cold water, drain.
3 green onions, tops and all cut into 1" pieces
2 medium cloves garlic, cut finely
1/2 t. ginger
2 t. sugar
2 to 3 T. crushed red pepper
1 T. saltRecipe
Mix all with rinsed and drained cabbage. Pack firmly in glass jars. Add enough water to cover cabbage. Let stand on counter top for several days. In warm weather; 1 day. In cooler weather; 5 days. Refrigerate. It keeps several weeks.
