    Crab and Mushroom Stroganoff

    List of Ingredients




    1 T. olive oil
    1/2 c. diced onion
    1/2 c. finely diced red bel pepper
    1 clove garlic, minced
    oz. fresh mushrooms, sliced
    2 T. butter or margarine
    2 T. flour
    1 c. chicken broth
    3 T. good dry white wine
    1/4 t. dried dill weed
    1/4 t. salt
    1/4 t. white pepper
    2 drops Tabassco Sauce
    1 c. light sour cream
    3/4 pound crabmeat, flaked or imitation seafood flakes
    8 oz. egg noodles, cooked and drained

    Pre heat oven to 350 degrees. In a medium saucepan over medium heat, warm oil. Add onion, pepper, garlic and mushrooms and saute until tender. Transfer to a 2 1/2 quart casserole dish lightly coated with non stick spray. In the same saucepan melt butter. Stir in flour and continue stirring until bubbly. Add chicken broth, wine and seasonings. Bring to a boil, stirring constantly, until thickened, 2 to 3 minutes. Remove from heat. Stir in sour cream and crabmeat. Add mixture to casserole dish along with the noodles and mix well. bake uncovered until bubbly, stirring once. About 20 to 30 minutes. Serves 4 to 6.
