Curried Chicken and Pasta Salad
List of Ingredients
3/4 lb. pasta Nuggets (cooked and drained)
2 T. slivered almonds
1 T. curry powder (may want to use less)
1/2 c. Miracle Whip (nonfat or lowfat)
1/2 c. lowfat plain yogurt ot nonfat sour cream
1/2 c. mango chutney or crushed pineapple
1 t. tumeric
1/2 t. cinnamon
2 c. cooked chicken breasts, cut into 1 inch pieces
1/2 c. raisins or sliced red grapes
1/2 c. chopped scallions
salt and pepper to taste
Recipe
In a large bowl, put cooled pasta and almonds in it. In a small bowl, combine curry, Miracle whip, yogurt, chutney, tumeric, and cinnamon. Mix well. Pour over pasta. Add chicken, raisins and scallions. Stir to coat. Serve or refrigerate.
