    This salad is my absolute favorite. It is from a resturant in ST. Louis called Pasta House.

    List of Ingredients




    Pasta House Company Salad
    1 head iceberg lettuce
    1/3 head Romaine lettuce
    1C artichoke hearts
    1C sliced red onions
    1C pimento,diced
    2/3C olive oil, first press
    1/3C regina red wine vinegar
    1t salt
    ¼ t black pepper
    2/3C parmigiano cheese, grated

    Recipe



    Wash lettuce, drain completely and place in refrigerator to chill. When well chilled, split head of iceberg lettuce in two halves, only pulling the heart of lettuce out and breaking into small pieces. Do not use knife on lettuce. The rest of iceberg will break up when tossed. Tear the romaine lettuce (each leaf into 3 sections). Open and drain artichoke hearts well, measure and add to lettuce. Do not use marinated artichokes. Peel and slice red onion and dice pimento. Drain completely. Measure and add to lettuce. Measure olive oil, vinegar, salt, pepper, and cheese. Add to lettuce. Toss and serve.
