    Easy Potatoes Anna

    Recipe Introduction


    I recently saw a recipe by this title. I don't know if it was in a book, a magazine or on the net but when I looked for it so I could make the potatoes I couldn't find it. This is the result of what I remembered plus some input from a friend.


    List of Ingredients


    • 2 lbs. potatoes
    • 1/2 stick of marg. or butter
    • sprinkle of salt & pepper


    Instructions


    1. Peel potatoes and slice thin. Generously brush the bottom and side of a 9 inch heavy iron skilet with some of the melted butter or marg.

    2. Arrange the slices in a circular pattern starting in the center and overlaping the slices slightly.

    3. Brush each completed layer with melted butter or marg. and continue layering the potatoes. If any butter remains pour it over potatoes.

    4. Season with a little salt and pepper if desired.

    5. Cover the potatoes with a sheet of buttered foil and put a weight on the foil (I use my tea kettle filled with water. Cook on top of the stove for 5 minutes.

    6. Remove tea kettle but NOT foil and bake at 425º for 1/2 hour. Uncover and bake another 10 minutes. Test for tenderness. Pour off excess butter and turn onto a plate or platter / bottom side up.

    7. Serves 3 or 4.
