    Bread Salad


    List of Ingredients


    • 1 large cucumber
    • 1 large red bell pepper
    • 1/2 small red onion,chopped/ or 6 scallions,sliced
    • 3 large red tomatoes
    • 1 large clove garlic, minced
    • 1/2 cup coarsely chopped parsley
    • salt and pepper to taste
    • 3 Tbs olive oil
    • 1 Tbs balsamic vinegar
    • 1/2 lb coarse day old bread
    • (a couple of basil leaves if your in the mood)


    Instructions


    1. Dice cucumber and red pepper; also dice tomatoe making sure all the juice goes into the salad bowl.

    2. Mix first 6 ingredients (including the juice from the tomatoes) in a salad bowl. If using basil add it now. Sprinkle on salt and pepper to taste and add the oil and vinegar. Mix well.

    3. Dice the bread and mix in well.The bread will soak up the dressing and juices.

    4. Serves 4-6.



    Final Comments


    The salad should be moist but not real wet. Add more oil and vinegar or bread to adjust for moisture.

    Salad is best a couple of hours after prepairing. Most people find it too soggy by the next day but I add more bread and eat the leftovers.

    Variations:
    1) Three Tbs of fresh lemon juice can be used instead of the balsamic vinegar and mint leaves in place of the basil. Toasted pita bread can be used for the bread.
    2)Add one or two roasted red and/or yellow bell peppers cut into strips to the salad in place of the non roasted peppers in the original recipe.
