    Mushroom Salad

    I don't know the origin of this recipe. I just made some minor changes.


    List of Ingredients


    • 4 Tbs olive oil
    • 1 1/2 lbs mixed, fresh mushrooms, spemmed & sliced
    • 1 red and 1 yellow bell pepper, cut into 1 1/4 inch slivers
    • 1/2 cup white wine
    • 1 garlic clove, finely chopped
    • 1 Tbs chopped parsley
    • 2 Tbs fresh lemon juice
    • 1/4 tea. each salt AND pepper


    Instructions


    1. Heat the olive oil in a large pan. Cook the bell pepper strips for a minute or two and then add the mushrooms and cook for 2 minutes, until they begin to brown. Stir in white wine, cover the pan and cook for 2 minutes more.
    2. Transfer the mushroons and their juices to a bowl and stir in the garlic, parsley, lemon juice, salt and pepper.
    3. Cool to room temperture or serve warm.
    4. This can be topped with grated cheese if desired.
    5. Serves 4.
