1 red and 1 yellow bell pepper, cut into 1 1/4 inch slivers
1/2 cup white wine
1 garlic clove, finely chopped
1 Tbs chopped parsley
2 Tbs fresh lemon juice
1/4 tea. each salt AND pepper
Instructions
Heat the olive oil in a large pan. Cook the bell pepper strips for a minute or two and then add the mushrooms and cook for 2 minutes, until they begin to brown. Stir in white wine, cover the pan and cook for 2 minutes more.
Transfer the mushroons and their juices to a bowl and stir in the garlic, parsley, lemon juice, salt and pepper.
