Potatoes and Beans in Vinaigrette
List of Ingredients
- 1 lg clove of garlic, crushed
- 1/4 teas. salt
- 1/8 teas. freshly ground pepper
- 3/4 cup olive oil
- 1 Tbs lemon juice
- 2 Tbs water
- 1 Tbs Dijon mustard
- 1 lb fresh green beans tipped and cut and blanched
- 1 med. to large red onion thinly sliced
- 1 1/2 to 2 lbs small red potatoes, cooked, cut in half or thirds/ leave skin on
Instructions
- Mix first 7 ingredients in a jar and shake well. Pour this over remaining ingredients and toss to coat well.
- Refrigerate 2-3 hours before serving.
