    Meatloaf Muffins

    Source of Recipe

    WW Post

    Recipe Introduction

    12 servings
    2 points each

    List of Ingredients

    1 lb. ground turkey breast
1 6 oz. box Stovetop Cornbread stuffing mix
    1 tsp. garlic
    2 egg whites
    1 medium onion, chopped
    1/4 cup ketchup
    1 cup hot water

    Recipe

Preheat oven to 350 degrees. Mix stuffing mix and hot water until moist. In a larger bowl mix all other ingredients. Add stuffing. Mix until well blended. Spray 12 muffin tin with cooking spray. Fill each muffin cup with turkey mixture. Bake for 30 to 35 minutes.

Notes: This was so good. I made it with ground turkey breast instead of ground beef. It tasted just like Thanksgiving without all of the fuss! I served the muffins with a baked potato and green beans. It was very fill and so good! Next time I'll add a little low fat turkey gravy. I don't think I would like it with ground beef.

Don't know who the orginial poster was but thank you so much. This is wonderful.
