Low-fat Applesauce Muffins

List of Ingredients
1 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 cup uncooked oatmeal
1/2 Tbsp baking powder
1/4 tsp table salt
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1 egg
1 cup Lucky Leaf Old Fashioned Natural Apple Sauce
1 Tbsp canola oil
1 tsp vanilla extract
1/2 Tbsp shortening
1/4 cup raisins Recipe
Preheat oven to 400 degrees. Mix all dry ingredients in medium size bowl. Whisk applesauce, egg, oil and vanilla extract in a separate bowl. Add to the dry mixture. Mix until just blended. Mixture may be lumpy. Gently fold in raisins.
Grease muffin pan. Spoon mixture into muffin cups, about 3/4 full.
Bake for 20 - 25 minutes. Place pan on cooling pan, then remove and serve warm.
