    Pumpkin Cupcakes

    Cupcakes: 2 points each
    Icing: 2 tablespoons =1 pt.


    List of Ingredients


    • 1 box of any cake mix any flavor
    • 1 small can of pumpkin
    • 1/2 cup boiling water
    • Icing
    • 1/2 cup of light margarine softened
    • 1 cup Splenda
    • 2 packages of nonfat cream cheese
    • 2 teas. of vanilla


    Instructions


    1. Put mix in and make 18 cupcakes. Bake at 350 for 15 minutes.
    2. Beat margarine and Splenda until Splenda is incorporated. Add cream cheese tablespoon by tablespoon. Mix until lump free. Add vanilla.

    3. This makes alot of icing so you can cut it in half. If you put a small amount on your cupcake it will be free. This is especially good if you use carrot cake or the spice cake mixes.
