Pumpkin Cupcakes

Cupcakes: 2 points each
Icing: 2 tablespoons =1 pt.
List of Ingredients
- 1 box of any cake mix any flavor
- 1 small can of pumpkin
- 1/2 cup boiling water
- Icing
- 1/2 cup of light margarine softened
- 1 cup Splenda
- 2 packages of nonfat cream cheese
- 2 teas. of vanilla
Instructions
- Put mix in and make 18 cupcakes. Bake at 350 for 15 minutes.
- Beat margarine and Splenda until Splenda is incorporated. Add cream cheese tablespoon by tablespoon. Mix until lump free. Add vanilla.
- This makes alot of icing so you can cut it in half. If you put a small amount on your cupcake it will be free. This is especially good if you use carrot cake or the spice cake mixes.
