Spinach & Mushroom Enchiladas

2 lite tortillas*
1 c spinach
1/2 c mushrooms
1 T lite onion & chive cream cheese
1 pinch each of cumin & chili powder
0-point cooking spray
1/2 oz. shredded pepper jack cheese
2 T lite sour cream
2 T green salsaRecipe
Preheat your broiler. Bring a frying pan to med-high heat, spray it with cooking spray, and throw in the spinach, mushrooms, cumin, and chili powder. Cook until the spinach condenses and the mushrooms are a bit brown. Reduce the heat on the pan and add in the cream cheese. Stir until it melts. This is your filling!
Fold the filling into the two tortillas, and place side-by-side in a small casserole dish. Mix the remaining three ingredients, and spread evenly over the top of your enchiladas. Place casserole pan under broiler until the cheese sauce melts and browns a bit on top.
These are so rich and filling! You’d never know they were lo-point.
