8 oz uncooked whole-wheat spaghetti, or buckwheat soba noodles
1 serving cooking spray (5 one-second sprays per serving)
2 medium garlic clove(s), minced
1 Tbsp ginger root, fresh, minced
1 pound lean pork tenderloin, cut into 1-inch cubes
1/2 cup shredded carrots
1/2 cup onion(s), diced
1 cup fat-free chicken broth
2 Tbsp low-sodium soy sauce
Recipe
Cook noodles according to package directions; drain and set aside.
Meanwhile, coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add garlic and ginger; cook 1 minute. Add pork and cook, stirring occasionally, until pork is golden brown on all sides, about 5 minutes.
Add carrots and onion; cook until vegetables are soft, about 2 minutes. Add broth and soy sauce; simmer until pork is cooked through, about 5 minutes more.
