1 tsp. oil
1/2 tsp. thyme
1/2 tsp salt divided
1/4 tsp pepper
1/2 cup chopped red onion
4 4oz boneless chicken breasts
1/3 cup. seedless raspberry preserves
2 tbsp. Balsamic Vinigar
Recipe
heat oil in large non stick skillet over med-high heat. Add onion and saute for 5 min. Season chicken breasts with 1/4 tsp. salt and thyme.
Add chicken breasts and cook 6 min. on each side until done. Remove chicken and keep warm. Add remaining 1/4 tsp salt, pepper, preserves and vinigar to pan and stir until preserves are melted. Place chicken breast on plate and top w/2 tbsp. sauce.
