List of Ingredients
- 1 pkg [6oz.] quick cooking long grain & wild rice
- 1 cup cooked and chopped chicken
- 1 can [8oz.] waterchestnuts- drained
- 1 cup chopped celery
- 1 cup finely chopped onions
- 1 cup light mayo [or light sour cream]
- 1 can fat-free cream of mushroom [ or fat-free cream of chicken soup
Instructions
- Cook rice casserole according to package directions. Combine rice, chicken, waterchestnuts, celery , and onions. Place in a casserole dish. Stir mayo and cream soup together. Spread over chicken and rice mixture. Bake covered in preheated 325F oven for 1 hour.
