    4 servings @ 7 pts. each

    List of Ingredients




    1 c. sliced celery (2 ribs)
    1 1/2 c. sliced carrots
    1/2 c. chopped onion
    3 cans low sodium/ low fat chicken broth
    1/2 tsp. poultry seasoning
    1/2 tsp. dried parsley
    1 2/3 c. reduced fat Bisquick
    2/3 c. skim milk
    2 c. chopped cooked chicken breast
    salt and pepper to taste

    Recipe



    Saute celery, carrots and onion in large dutch oven coated in cooking spray for 6 minutes or until tender. Stir in broth and seasonings. Boil for 5 minutes.

    Combine Bisquick and milk. (I added some dried thyme to the Bisquick mix - added lots of flavor)

    Stir chicken into stew. Drop Bisquick mixture in ping pong ball sized portions one at a time into boiling stew. Cover and reduce heat. Simmer, stirring occasionally for 8-10 minutes.
