1/2 cup fat-free sour cream
2 tsp minced garlic
1 tsp table salt

Clean potatoes under cool running water. Cut into chunks and do not peel. Place in a pot and cover with enough water to just cover; bring to a boil. Cook approximately 10 more minutes, or until fork tender. Drain potatoes and place in a bowl. Mash using a hand-held mixer. Add sour cream and garlic. Mix together. Add salt and freshly ground pepper to taste.
