One Point Garlic Butter Rice

1 Tbsp fat-free margarine, chunked
2 cup fat-free chicken broth
2 garlic cloves, finely minced
1 1/2 cup instant long-grain white rice
Recipe
In a medium sized microwave-safe bowl, combine uncooked rice and broth. Sprinkle the minced garlic and chunks of margerine evenly over rice/broth mixture.
Microwave on high power for five to six minutes, or until done. Fluff gently with a fork (making sure to evenly distribute the garlic throughout the rice) and serve hot.
This quick, easy, and flavorful rice is great served under grilled chicken or seafood as a side dish, but can also be eaten alone as a satisfying light meal
