    1 quart vegetable oil, for frying hush puppies
    1 cup white cornmeal
    1 1/2 teaspoons flour
    1/2 teaspoon baking powder
    1 teaspoon sugar
    3/4 teaspoon salt
    1/2 cup buttermilk
    1 egg, beaten
    1/2 small onion, finely minced




    Recipe






    In a deep-fat fryer, heat oil to 375 degrees. Sift together dry ingredients into a medium bowl. In a small bowl, stir together buttermilk, egg and onion. Mix wet ingredients into dry, stirring well but do not overbeat. Drop one tablespoon at a time into hot oil. When hush puppies turn golden brown and float (about 3 minutes), remove from oil and drain on paper towels. Makes about 12 hush puppies.
