    PEACH PRESERVES CHEESECAKE

    • ******BASE********
    • 2 1/2 c.self raising flour
    • 1/2c.sugar
    • 1/2c. brown sugar
    • 1c.butter
    • 3/4c. sour cream
    • 1tsp.vanilla extract
    • 1tsp. rum extract,1 Egg
    • *******FILLING********
    • 1-8oz cream cheese,softened
    • 1/3c.confectioner's sugar
    • 1 egg,2 oz white chocolate heated with 2 Tbsp whipping cream
    • 1 1/2c peach preserves,
    • ********TOPPPING*******
    • 1c. reserved crumb mixture(from base)
    • 1/3c. chopped pecans


    Instructions


    1. Pre-heat oven to 350 degress.Grease and flour bottom and sides of 9 or 10 inch springform pan.
    2. Combine flour and sugars,cut in butter until mixture resembles coarse crumbs....Reserve 1c.crumb mixture
    3. To remaining mixture,add sour cream,vanilla extract,rum extract and egg ,blend well.
    4. Spread batter evenly over bottom and 2 inches up side of prepared pan.
    5. Combine cream cheese,confectioner's sugar,egg and heated white chocolate with whipping cream,blend well well.Pour mixture over the base mixture.
    6. Carefully spoon peach preserves over the cream cheese mixture.
    7. Combine the crumb mixture with the pecans,sprinkle over the peach preserves.
    8. Bake for 45 minutes to 55 minutes or until cream cheese is set ,and crust is golden brown.
    9. cool 15 minutes on rack,removes sides of pan.
