PEACH PRESERVES CHEESECAKE

- 2 1/2 c.self raising flour
- 1/2c.sugar
- 1/2c. brown sugar
- 1c.butter
- 3/4c. sour cream
- 1tsp.vanilla extract
- 1tsp. rum extract,1 Egg
- *******FILLING********
- 1-8oz cream cheese,softened
- 1/3c.confectioner's sugar
- 1 egg,2 oz white chocolate heated with 2 Tbsp whipping cream
- 1 1/2c peach preserves,
- ********TOPPPING*******
- 1c. reserved crumb mixture(from base)
- 1/3c. chopped pecans
Instructions
- Pre-heat oven to 350 degress.Grease and flour bottom and sides of 9 or 10 inch springform pan.
- Combine flour and sugars,cut in butter until mixture resembles coarse crumbs....Reserve 1c.crumb mixture
- To remaining mixture,add sour cream,vanilla extract,rum extract and egg ,blend well.
- Spread batter evenly over bottom and 2 inches up side of prepared pan.
- Combine cream cheese,confectioner's sugar,egg and heated white chocolate with whipping cream,blend well well.Pour mixture over the base mixture.
- Carefully spoon peach preserves over the cream cheese mixture.
- Combine the crumb mixture with the pecans,sprinkle over the peach preserves.
- Bake for 45 minutes to 55 minutes or until cream cheese is set ,and crust is golden brown.
- cool 15 minutes on rack,removes sides of pan.
