- 1C. SUGAR
- 1/4+2 tsp.corn starch
- 1/8 tsp.salt
- 3 eggs ,beaten
- 3.c milk
- 11/2 Tbsp.butter
- 1/2 tsp.vanilla
- 1/2c.coconut
- 1(9-inch) BAKED pie shell
Instructions
- Combine sugar,cornstarch, and salt in a heavy saucepan.
- Stir well.
- Add eggs and milk.
- mix well.
- Cook over medium heat,stirring constantly,until mixture boils and thickens.
- Remove from heat.
Stir in coconut.
- Stir in butter and vanilla.
- Pour into pie shell
- Cover with wax paper.
- Let cool for 30 minutes
- Chill until firm.
- Spread with cool whip over the top and return to the refigertor until time to serve
