My sister-in-law and I got this recipe one holiday season at a WW meeting back in the '90s. I have since learned this is a modified recipe from Betty Crocker/Bisquick called Impossibly Easy Pumpkin Pie.
List of Ingredients
2 cups unsweetened canned pumpkin*
1/2 cup 1% milk
3/4 cup sugar
1/2 cup Bisquick baking mix
2 T. low-calorie stick margarine
2 and 1/2 tsp. pumpkin pie spice
2 tsp. vanilla
2 eggs (or substitute 1/2 cup Egg Beaters)

1. Whisk together all ingredients for 2 minutes.
2. Spray 9" pie dish with cooking spray.
3. Pour in pie filling.
4. Sprinkle with nutmeg.
5. Bake 50 minutes at 350 degrees F.
*I use one can of pumpkin pie filling which says it has 1 3/4 cups of pumpkin, and it works out just fine.
**According to this recipe the pie makes 8 servings @ 4 points each (old POINTS value), but I always cut the pie so that it makes 6 servings. Enjoy!
