MONTEREY SPINACH MELTS

4 ounces Monterey jack cheese
1/4 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon salt
1 garlic clove, pressed
1 (9-ounce) package frozen chopped spinach, thawed, drained, and patted dry
1/3 cup finely chopped carrots
1/4 cup finely chopped onion
24 1/4-inch-thick slices from French bread loaf (baguette) Recipe
Preheat oven to 375 degrees. Cut cheese into 24 thin slices; cover and set aside. In large bowl, combine mayonnaise, sour cream, salt, and garlic; mix well. Stir in spinach, carrot and onion. Spread rounded tablespoon of mixture on each bread slice. Place on baking sheet; top with cheese. Bake 10 to 12 minutes, until cheese is melted and bread is crisp.
Yield: 24 appetizers.
