    Sun-Dried Tomato and Herb Cheese Balls

    List of Ingredients




    8 oz. sun-dried tomatoes
    1/2 Tablespoon fresh basil
    1/2 Tablespoon fresh oregano
    1 teaspoon of fresh rosemary
    1 green onion
    4 cloves of garlic
    2 (8 oz.) packages of cream cheese (can be fat free)
    2/3 cup pine nuts

    Recipe



    Soak the sun-dried tomatoes in water for five minutes and then drain. Place in a food processor or blender and chop into small pieces. Set aside. Next, finely chop (by hand) the basil, oregano, rosemary, green onion, and garlic.

    Mix all of the above with two packages of cream cheese softened. Stir until all of the ingredients are combined. Form the mixture into two balls and use plastic wrap to cover. Chill for an hour. Remove balls from plastic wrap and place on a plate. Coat with toasted pine nuts. Serve with crackers. Enjoy!!!
