Santa Fe Beans and Barley

2 Tbsp olive oil
2/3 cup onion(s), chopped
4 oz chopped green chilies, 1 can, drained
2/3 cup uncooked barley, regular pearl barley
2 cup fat-free beef broth
15 oz canned pinto beans, drained and rinsed
1/2 cup shredded reduced-fat Monterey Jack cheese Recipe
Heat oil in large skillet over medium-high heat. Add onion and chilies; saut� 3 minutes. Add barley and broth. Bring to a boil, then reduce heat to low, cover and cook until barley is tender, about 45 minutes.
Stir in beans and cheese; continue to cook until beans are hot and cheese is melted. Yields about 1 1/4 cups per serving.
