    "I spotted this on the BH&G site a while back. It says you don't need to buy pricey equipment to make specialty coffees.....though I already knew this! =) The editors at BH&G created your favorites using ordinary coffee makers."

    Espressos: Start with whole espresso beans, if possible, and grind them yourself. Or, have them ground when you buy them. In a regular drip coffeemaker, use 1/3 cup ground beans per 1 cup of water. Serve in demitasse cups, or fill mugs about 1/4 full. Serve with lemon peel or flavored sugars.

    Cappuccino: Prepare espresso as above. Heat 1 cup low-fat or skim milk till hot; do not boil. Remove from heat and pour milk into a blender container. Holding the blender lid in place, blend at high speed until milk is frothy, up to 3 minutes. For each serving, top espresso with a head of frothy milk, then sprinkle with ground cinnamon and/or shaved chocolate.

    Café Latté: Combine equal amounts of espresso and hot, unfrothed milk. Top with a head of frothy milk (see frothing directions above).

    Dessert coffee: Combine 1/2 cup whipping cream and 2 tablespoons of hot-chocolate mix in a small mixing bowl. Whip with a mixer until soft peaks form. Add a dollop of the whipped topping to coffee, then sprinkle with cinnamon.
