8 Eggs
Salt to season
Fresh ground black pepper to season
Cooking oil as needed
1/3 cup Smoked ham, diced
1/4 cup Tomato, fresh, diced
2 Scallions, minced
6 - 8 Fresh basil leaves, fresh, chiffonade cut
1 cup Cheddar cheese, shredded
8 Flour tortillas, medium
4 oz. Butter, portioned into 1 oz. pats
Fresh fruit or berries to garnish
Salsa Fresca
2 cups Tomato, diced
1/2 cup Red or white onion, finely diced
1 Jalapeno pepper, finely diced
1/4 cup Cilantro, minced
Squeeze of Fresh lemon juice

Prepare Salsa Fresca by combining tomato, onion, jalapeno pepper, cilantro and lemon juice. Mix thoroughly. Place one-fourth in a blender and puree until smooth.
Return pureed portion to mixture. Season with salt and pepper. Fry eggs in a non-stick egg pan with a small amount of oil until set, reserve. Top four of the flour tortillas with cheese, ham, tomato, scallion and basil. Add two cooked eggs on each and top with remaining cheese and tortillas.
Melt butter pats over medium heat in a non-stick pan. Cook until golden brown on both sides. Cut into quarters and place on warm serving plates. Top with Salsa Fresca and serve
