    Spiced Sugar Bacon

    Source of Recipe

Dallas Morning News, January 15, 2003

    List of Ingredients

6 ounces bacon (6 regular slices)
1/3 cup packed light brown sugar
    1/8 teaspoon allspice

    Recipe

Preheat oven to 350 F. Set aside rack placed in broiler pan or jellyroll pan.

Cut each bacon slice in half, crosswise. Mix sugar and allspice in shallow soup dish; coat each side of bacon. Place in single layer on rack.

Bake until bacon is crisp and sugar is bubbly, about 20 to 24 minutes. Watch closely toward end of cooking; do not burn. Use tongs to quickly blot on paper towels (do it quickly or paper will adhere to bacon), then transfer in single layer to foil. Serve at room temperature. Can be made several hours ahead and kept at room temperature. Makes 4 servings.
