"I got this recipe from a girl at work. I made it Monday, but, of course, I added some extra spice (a little more hot sauce and Cajun spices) and also some Andouille sausage instead of just shrimp."
"OK...here goes..the cook does not guarantee satisfaction for this recipe, because she does not know how to use a recipe..I taste as I go along, so it's hard to give exact measurements..most of what makes it good is tasting as you go...as far as seasonings go. The rest of the ingredients are as follows:"
List of Ingredients
4 stalks celery/chopped
1 medium onion/chopped
1 lg. can diced tomatoes (plain, no seasonings)
1 sm. can tomato sauce
3-4 bay leaves
3-4 drops of tabasco sauce (more for more heat)
garlic, salt and pepper to your taste
1/2 - 1 can of beer (no particular brand necessary) (this is something I learned from a Cajun friend) Recipe
Brown onions and celery in oil until clear, add all other ingredients, bring to a boil, stirring frequently, cover and simmer on low heat. I usually try to simmer for 1-2 hrs. for the best flavor. Not necessary if you are in a big hurry.
Cook shrimp (1 lb. or more, if you can afford it, the more the merrier, I say) Use Zatarain's crab and shrimp boil. Peel and cool.
Add shrimp 15-20 minutes before serving on low, low heat, you don't want the shrimp to cook too much more or they will fall apart.
Serve over rice.
