    1 pound ground beef
    2 tablespoons butter
    1 medium onion, chopped
    2 tablespoons diced green chilies
    1 cup (8 ounces) tomato sauce
    1 package (14 ounces) taco seasoning mix
    1/2 cup water
    2 eggs
    1 cup milk
    1 (6 ounce) package Fritos
    8 ounces Monterey Jack cheese, shredded or sliced
    1 cup sour cream
    1/2 cup grated cheddar cheese

    Brown beef and drain. Saute onion and pepper in butter and mix with meat. Combine tomato sauce, taco seasoning and water. Beat eggs and milk, add to tomato sauce stirring constantly.

    Layer in two-quart casserole: Fritos, meat, sauce and Monterey Jack cheese. Repeat layers. Cook at 350 degrees Fahrenheit until done.

    Spread sour cream on top, then cheddar cheese. Cook until cheese is melted.

    Serves six.
