Chocolate Marshmallow Bombs

1 stick butter, softened (1/2 cup)
1 cup sugar
1 egg
1 tsp. vanilla extract
1 1/2 cups flour
1/3 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
6-oz. semi-sweet mini chocolate chips (1 cup)
1/2 cup mini marshmallows, frozen Recipe
Preheat oven to 375ºF.
In a large bowl, beat butter and sugar with an electric mixer on medium speed until creamy. Beat in egg and vanilla.
Add flour mixed with cocoa powder, baking soda, and salt and beat until blended. Stir in chocolate chips.
Shape dough into 1-in. balls around a few marshmallows, pinching ends of dough to enclose marshmallows completely. Place 1-inch apart on ungreased cookie sheets.
Bake 12 to 15 minutes, until set. Let stand 2 minutes, then remove to a rack and let cool completely.
