Vicki's Apple Holler Jiffy Peach Cobbler

Vicki Flannery, lead baker at Apple Holler, shared one of her favorite peach recipes. She said when making most peach cobblers, the greatest challenge is the crust. However the crust in this recipe is foolproof. "The batter bakes into a crust without all that rolling."
List of Ingredients
1 quart peaches, skinned and sliced
1 1/2 cups sugar (divided)
1/2 cup water
1/2 cup (1 stick) butter or margarine
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup skim milk

Preheat oven to 350 degrees.
In saucepan, combine sliced peaches, 1/2 cup sugar and water. Cook over medium heat, stirring often, until sugar has dissolved and peaches are hot. Remove from heat and set aside.
Melt butter or margarine in 10-inch oven-proof skillet, 11 by-7-inch baking pan or a 1 1/2-quart casserole dish about 10 inches in diameter and at least 2 inches deep.
In bowl, mix together flour, remaining 1 cup sugar, baking powder, salt and cinnamon. Stir in milk and mix well until smooth.
Pour batter over melted butter. Pour reserved peaches and syrup over all. Sprinkle with additional sugar and cinnamon if desired.
Bake in preheated oven 35 to 40 minutes or until golden brown. Serve warm or chilled. Makes 6 to 8 servings.
