Chili con Queso con Chorizo

1/4 cup (1/2 stick) butter
1/2 cup flour
1 1/2 cups milk
8 ounces chorizo, cooked and crumbled
8 ounces mild Cheddar cheese, shredded
8 ounces Chihuahua or Quesdilla cheese, shredded
1 or 2 chipotles in adobo sauce, minced
1 poblano chile, roasted, peeled and chopped
Milk or salsa
salt and pepper to tasteRecipe
Heat the butter in a saucepan over medium heat until melted. Stir in the flour. Cook over low heat until smooth and aromatic, stirring constantly; do not brown. Add 1 1/2 cups milk gradually, stirring constantly. Cook for 10 minutes, stirring frequently. Add the chorizo, the cheeses, chipotle chiles and poblano chile. Cook until the cheeses are melted, stirring occasionally; do not boil. You may add milk or salsa if a thinner consistency is desired. Season with salt and pepper. Serve warm. Serve with tortilla chips. Makes 3 cup.
