Tomato Sauce for Fondue Dipping

List of Ingredients
1 T oil
2 shallots, finely chopped
1 clove garlic, crushed
14 oz can chopped tomatoes
2 T tomato paste
salt and pepper
1 T chopped fresh parsley
Recipe
In a small pan, mix together garlic, tomatoes with their juice and tomato paste, bring to a boil. Reduce heat and simmer, uncovered, for about 30 minutes or until the sauce has reduced and thickened. Stir in parsley and serve hot or cold.
