CARAMEL SUNDAE COOKIES

2/3 cup LAND O LAKES® Butter -- softened
1 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk chocolate chips
3/4 cup chocolate-covered toffee bits
3/4 cup chopped pecans
Drizzle Ingredients:
1/2 package caramels (about 25) -- (14-ounce) unwrapped
2 tablespoons whipping cream
1/2 cup milk chocolate chips -- melted Recipe
Heat oven to 350°F. Combine butter and brown sugar in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add egg and vanilla. Continue beating until well mixed (1 to 2 minutes). Add flour, baking soda and salt. Reduce speed to low; beat until well mixed (1 to 2 minutes). Stir in 3/4 cup chocolate chips, toffee bits and pecans by hand.
Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake for 9 to 11 minutes or until edges are golden brown. Cool completely.
Place caramels and whipping cream in 1-quart heavy saucepan. Cook over medium-low heat, stirring constantly, until smooth (5 to 10 minutes). Drizzle cooled cookies with melted caramel; drizzle with melted chocolate.
Yield: 3 dozen cookies
