Caramel Turtle Fudge Ice Cream

4 Cups Whole Milk
5 Cups Heavy Cream
1 Tbsp. Vanilla
1 Cup Pecans
2 Cups Sugar
1 Tbsp. Lemon Juice
1/2 Cup Water
Recipe
-Combine sugar, water, and lemon juice in a saucepan over medium heat.
-Boil mixture until dark amber in color.
-Reduce heat to low, then gradually add 1 cup heavy cream(This makes a great caramel topping if used alone.)
-Add the rest of the cream and the milk.
-Let cool, then freeze in the ice cream maker.
-Add pecans about five minutes before the ice cream is finished.
-Smother with hot fudge before serving.
