Honey-Beer Vinaigrette

2 cups honey
1 bottle dark beer, or substitute your favorite
½ cup mild vinegar or honey vinegar
1 to 2 tablespoons whole grain mustard (optional) to taste Recipe
Cook's notes: Use at least a two-quart saucepan or larger for the honey-beer mixture to boil up. It's also good with whole- grain mustard added after the vinegar for another dimension of flavor. Procedure: Cook honey over medium heat until reduced and almost caramelized - do not burn. Add beer, whisk in and simmer for about 10 minutes - keep an eye on it, as the combined honey and beer might boil over - adjust heat accordingly. Let cool 5 minutes, then whisk in vinegar and optional mustard.
Presentation: This mixture also can be used to glaze chicken or seafood.
