    6 boneless skinless chicken breasts
    1 c. 1%buttermilk
    1/2c. reduced fat biscuit baking mix
    1/2c. cornmeal
    1-1/2 tsp. paprika
    3/4 tsp. salt
    3/4 tsp. poultry seasoning
    1/2 tsp. garlic powder
    1/2 tsp. pepper
    1/4 tsp. cayenne pepper
    6 onion or kaiser rolls
    6 lettuce leaves
    12 tomato slices

    Recipe



    Pound chicken to 1/2 in. thickness. Pour buttermilk into a large resealable plastic bag;add chicken and refrigerate for 8 hours or overnight.

    In a shallow bowl, combine the biscuit mix, paprika,salt, poultry seasoning,cornmeal, salt,garlic powder, pepper, and cayenne. Remove chicken one piece at a time, allowing excess buttermilk to drain off. Discard buttermilk. Coat chicken with the cornmeal mixture; place in a 13x9-inchx2-inch baking dish coated with nonstick spray. Bake uncovered at 400 degrees for 12 min. Turn chicken, bake 8 to 12 minutes longer or until no longer pink and coating is lightly browned. Serve on roll with lettuce and tomato.
