Gingerbread Muffins

Makes 12 muffins
1 beaten egg
1/2 cup sugar
1/2 cup light molasses
1/4 cup salad oil
1 cup flour
1/4 tsp salt
1/2 tsp soda
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 cup boiling water
1/2 cup chopped walnuts (optional)Recipe
Combine egg, sugar, molasses and oil. Beat well. In another bowl, mix flour, salt, soda and spices. Combine with egg mixture, then add the water. Fold in nuts if desired. Fill greased muffin tins two-thirds full and bake until done. Bake at 350 degrees for 20 minutes.
