    (We do not make these from a recipe, therefore, I do not have exact amounts for the ingredients.)

    Cooking oil
    Dozen corn tortillas
    Grated Cheddar Cheese
    Chopped Onions
    Sliced Olives
    Enchilada Sauce (Use the recipe that follows or your own personal preference)

    Make sauce according to directions.

    In medium-sized skillet, heat about a half-inch of cooking oil; dip tortillas in heated oil to soften; then dip in prepared enchilada sauce.

    Fill with desired amount of cheese, chopped onions and olives; roll and place seam side down in baking dish. Repeat until pan is full. Sprinkle with remaining cheese, onions and olives; drizzle additional sauce over. Bake at 350° until hot and bubbly.

    1/4 c. oil
    1 medium onion, minced
    1 clove garlic, minced
    1 (10 oz.) can tomato paste
    2 c. water
    2 tsp. chili powder
    1 tsp. vinegar
    1 tsp. sugar
    1/2 tsp. oregano
    1/2 tsp. salt
    1/8 tsp. cayenne pepper

    Combine oil, onion, garlic, tomato paste and water and simmer for 3 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer 15 minutes.
