    Baked-Potato Salad

    List of Ingredients

    Serves: 6 to 8

    8 medium potatoes (about 3 pounds)
    1 tablespoon salt
    1 container (16 ounces) sour cream
    1/2 cup real bacon bits
    4 scallions, thinly sliced
    1/2 teaspoon black pepper
    1-1/2 cups cheddar cheese
    1/4 cup butter, melted

    Recipe

    I bake my potatoes in the oven for about 45 minutes or so until done, with no foil on them. Once done, cool until easy to handle. Cut potatoes into bite-sized chunks (I keep skins on); toss with melted butter. Mix in rest of ingredients well.

    This is great served cold or warm.
