Baked Potato Casserole

Great for a pot luck dinner - this makes a lot! I usually half the recipe for smaller crowds
List of Ingredients
5 lbs. red potatoes, cooked and cubed
1 lb. sliced bacon, cooked and crumbled
4 cups (1 lb.) cubed cheddar cheese
4 cups (1 lb.) shredded sharp cheddar cheese
1 large onion, finely chopped
1 cup mayonnaise
1 cup sour cream
1 tbsp. minced chives
1 tsp. salt
1/2 tsp. pepperRecipe
In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture and toss gently to coat. Transfer to a greased 4-1/2 qt. baking dish. Bake uncovered for 50-60 minutes or until bubbly and lightly browned.
