4 boneless skinless chicken breasts pounded to 1/2" thickness
2 tsp seasoning salt
6 slices bacon
1/4 cup prepared mustard
1/4 cup honey
2 tbs light corn syrup
2 tbs mayo
1 tbs dried onion flakes
1 cup sliced fresh mushrooms
2 cups Colby-Monterey Jack cheese shredded Recipe
Rub the chicken with the seasoning salt and let marinate in fridge while preparing other ingredients. Preheat oven to 350. Cook bacon in skillet until crisp,set aside reserving bacon drippings in pan. Combine mustard, honey, corn syrup, mayo and dried onion flakes. Remove half the sauce cover and chill to serve later. Place chicken in the skillet and saute in the drippings 3-5 min per side until browned. Remove from skillet and place in a greased 9x13 baking dish. Spread honey mustard sauce over chicken the layer each chicken piece with bacon and mushrooms.
Sprinkle with shredded cheese. Cover and bake for 15-20 min. Serve with reserved honey mustard sauce.
