Mushroom Lovers Chicken

Recipe Introduction
Only for true mushroom lovers... Great served over rice (I use brown) or hot noodles (I use ramen noodles for my husband)... We have even had it over steamed broccoli and always have a big salad...You may find it easier to pan fry the chicken if you pound the chicken before you bread it.
List of Ingredients
3 to 5 cups sliced mushrooms (fresh, canned or a mix of both)
3 green onions sliced
1 tsp garlic, minced
4 skinless, boneless chicken breast halves
1 to 2 eggs, beaten
1 cup seasoned bread crumbs (seasoned with garlic powder and parmesan cheese)
2 tablespoons butter (I just use cooking spray)
1 cup mozzarella cheese, shredded
1 cup chicken broth (I use a whole can) Recipe
Preheat oven to 350..In a bowl combine mushrooms, green onions and garlic...Place half of the mushrooms in a 9x13 inch pan... Dip chicken into beaten eggs, then roll in bread crumbs...In a skillet, melt butter over medium heat (or just use cooking spray)... Brown both sides of chicken in skillet... Place chicken on top of mushrooms, arrange remaining mushrooms on chicken, and top with mozzarella cheese...Pour chicken broth over cheese...Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.
