    Church Salad w/Poppyseed Dressing

    Salad:
    - 1 large head romaine lettuce, in bite size pieces
    - 4 oz shredded Swiss Cheese
    - 1 C. cashews
    - 1/4 C. Craisins
    - 1 apple, cubed
    - 1 pear, cubed

    Dressing:
    - 1/2 C. sugar
    - 1/3 C. lemon juice
    - 2 tsp. finely chopped onion
    - 1 tsp. Dijon Mustard
    - 1/2 tsp. salt
    - 2/3 C. oil (salad)
    - 1 tbsp. poppy seeds

    Recipe



    Dressing: Make dressing day ahead for it to blend well. Use hand mixer on low speed to combine all ingredients except oil and poppy seeds. Add oil slowly until thoroughly combined. Add poppy seeds and stir.

    Salad: Mix all salad ingredients in a large bowl and pour dressing to coat salad well.

    If the salad is going to sit for any length of time before serving, leave the cheese, cashews and dressing off until you are ready to serve.
