Pineapple and Cabbage Salad

List of Ingredients
1 pineapple, peeled, cored and cubed
1 grapefruit, peeled and segmented
1 orange, peeled and segmented
½ white cabbage, finely shredded
½ cucumber, sliced unpeeled
1 sweet red pepper, seeded and sliced
1 c. diced cooked ham (turkey, chicken or shrimp could be used)
grated rind of 1 orange
4 T. olive oil
2 T. wine vinegar
2 T. mayonnaise
2 T. heavy cream
1 to 2 tsp. Pure Vanilla Extract (to taste)

In a large salad bowl combine the fruit, vegetables, and ham. In a small bowl, mix grated orange rind, oil, vinegar, mayonnaise, cream, salt, sugar, and vanilla to taste. Pour the dressing over the salad and mix thoroughly. Adjust seasonings. Chill thoroughly before serving.
