    1 tablespoon balsamic vinegar
    1 tablespoon fresh lemon juice
    1 teaspoon Dijon mustard
    1 garlic clove, peeled and minced
    ¼ teaspoon salt
    ¼ teaspoon freshly ground pepper
    ¼ cup olive oil
    ½ pound fresh spinach, washed, dried, and stems removed
    1 avocado, peeled and cut into ½-inch pieces
    12 (or more) grape tomatoes, halved
    ¼ Vidalia or sweet onion, thinly sliced
    ¼ cup pine nuts, toasted (see note)

    To make the dressing, in a small bowl whisk together the vinegar, lemon juice, mustard, garlic, salt, and pepper. Continue whisking while adding the olive oil in a slow, steady stream. Taste and add more salt and pepper, if desired.

    To make the salad, in a large bowl put the spinach, avocado, tomatoes, and onion. Toss with the dressing to coat evenly. Sprinkle with pine nuts and serve.

    Servings: 4.

    Note: Toast pine nuts in an ungreased skillet over medium heat stirring constantly, about 2 minutes or until golden.
