SALAD WITH WINTER FRUIT, WALNUTS & BLUE CHEESE
List of Ingredients
2 sweet-tart apples or 2 ripe but firm pears, such as Bartlett or Bosc
1/3 cup walnuts, pecans or hazelnuts, toasted 7 minutes in 350 degree oven.
2 T. craisins or dried cherries
5 cups salad greens (such as mixed baby greens, butter or bronze-leaf lettuce)
1/2 lemon (do not substitute bottled juice)
2 T. extra virgin olive oil
Kosher salt
2 oz. blue cheese, crumbled Recipe
Quarter and core apples or pears, slice each quarter lengthwise into 4, then cross-wise into bite-size pieces. Place into salad bowl along with nuts, craisins and salad greens.
Give a generous squeeze of lemon over the salad. Add oil and about 1/2 tsp. salt. Toss salad well. Taste for lemon and salt, remembering that blue cheese will be salty, and correct seasoning. Sprinkle blue cheese over salad and serve. Makes 4-6 servings.
