    Santa Fe Grilled Chicken Salad

    Dressing:
    1 cup nonfat plain yogurt
    1 4 oz can chopped green chilies, undrained
    2 garlic cloves, crushed
    2 T fresh lime juice
    1/2 tsp Ac'cent Flavor Enhancer
    1/2 tsp chili powder
    1/2 tsp ground cumin
    1/4 tsp crushed red pepper flakes

    Salad:
    4 boneless, skinless chicken breast halves
    1 10 oz pkg torn mixed greens
    1 cup shredded Mexican blend cheese
    1 cup broken corn or tortilla chips
    1 cup halved cherry tomatoes
    1/4 cup sliced green onion
    1 2-1/4 oz can sliced black olives, drained
    2 T fresh cilantro leaves

    Recipe



    In a small bowl, blend dressing ingredients. Reserve 1/2 cup to drizzle on salad.

    Heat grill to medium hot. Brush chicken with dressing and place on oiled grill rack. Grill 10-13 minutes turning once and brushing occasionally with dressing, until juices run clear and chicken is no longer pink inside.Remove chicken to cutting board.

    While chicken is grilling, in large bowl, combine greens, cheese, chips, tomatoes, onions, olives and cilantro. Mix well. Divide onto 4 plates.

    Cut chicken crosswise into 1/2 inch strips. Arrange on salad. Drizzle with 1/2 cup reserved dressing. Serves 4
