    Strawberry-Chicken Salad with Poppy Seed Dressing

    List of Ingredients




    3 chicken breast halves
    2 cups sliced fresh strawberries
    2 cups honedew melon, scooped into balls
    3 cups torn spinach
    3 cups torn romaine lettuce
    1 head endive, thinly shredded

    Dressing:
    1/2 cup canola oil
    1/4 cup vinegar
    1 tbsp. granulated sugar
    2 tsps. minced onion
    1 tsp. ground mustard
    1 tbsp. poppy seeds
    2 tbsps. orange juice
    zest of 1 lemon

    Recipe



    1. Cook chicken beast halves in a loosely covered microwave dish with 2 tbsps. water for 8 - 10 minutes at high power, or until done. Cool and cut into cubes. (Or use leftover chicken).

    2. Combine and gently toss together all salad ingredients, except endive, in a large salad bowl.

    3. To make dressing, combine dressing ingredients in a blender or food processor and blend until smooth.

    4. Drizzle dressing over salad and toss gently. Scatter endive over top. Serve or chill and serve later.

    Yield: 6 - 8 servings.
